Vegetables are a great addition to any meal, or a meal in of themselves. One vegetable that I feel has been overlooked for years (and seems to be having a resurgence) is the brussel sprout. A delicious and healthy option that is loaded with vitamins and minerals, the brussel sprout is the perfect side dish to round out dinner, or can be a meal by themselves. When it comes to cooking brussel sprouts, there several options, but one delicious way that I have found is to pan sear them using a cast iron skillet that can be done on stove top or grill.
For this recipe you will need:
INGREDIENTS
- Approximately 40 Brussel Sprouts (stemmed and halved)
- 1/2 Yellow Onion – Julienne
- 1 Yellow Bell Pepper – Julienne
- 2 oz. Extra Virgin Olive Oil
- 2 Tbsp Salt
- 1 Tbsp Pepper
RECIPE
In a large bowl, combine and toss all the ingredients. The combined ingredients should resemble something that looks like a salad that’s been tossed in its own dressing with all the ingredients combined uniformly. Typically I would combined the brussel sprouts, onions and bell pepper and combine first, and then add the olive oil, salt and pepper.
Once you have combined all the ingredients, heat up a 12” cast iron skillet over medium heat until hot to the point that a few drops of water will create a sizzle. Once the skillet is hot, add all the ingredients from the bowl into the sizzling hot skillet. Spread the brussel sprouts evenly and allow to cook for 6 to 8 minutes. During this time, DO NOT TOUCH. Allow the brussel sprouts to sear. It’s times like this that I find a timer to be incredibly helpful.
After about 6 to 8 minutes, give the brussel sprouts a light toss, and then allow to cook for an additional 3 to 4 minutes. After the additional cook time, the brussel sprouts are ready to serve.
This side dish goes well with just about any meat, but typically I prefer to serve these with either rack of lamb or tri-tip, but for the most part, any delicious grilled meat will do.
